I just finished making post canada the simple overnight prep. This is going to be yummy! I didn't have lemon fat-free pudding, but I had vanilla so I just added a smidgen of lemon extract to it. And I had some non-sweetened vanilla almond milk and some honey vanilla Greek yogurt--they worked fine. Also I had old fashioned oatmeal. Next time I may try oat groats and chia seeds. (I just learned that we're supposed to grind chia seeds, the same as flaxseeds--I use a little coffee grinder.) Tomorrow morning I think I'll add this mixture to strawberries, raspberries, blueberries, sliced bananas and walnuts. Can't wait! A truly inspired recipe. We do have some smart SP friends!
